2. Mahi mahi fillets 4 (6 ounce)
3. Garlic salt, or to taste 1 pinch
4. Ground black pepper, or to taste 1 pinch
5. Butter 1 tablespoon
6. Frozen chopped spinach, thawed and well drained 1 (10 ounce) package
7. Green onions, chopped 6
8. Garlic, chopped 3 cloves
9. Evaporated milk, plus more as needed ¼ cup
10. Hot pepper sauce, or to taste 2 dashes
11. Shredded Monterey Jack cheese 2 cups
12. Shredded Parmesan cheese ½ cup

1 . Stage

Cook bacon in a large, deep skillet over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain on a paper towel-lined plate and chop when cool enough to handle.

Heat a nonstick skillet over medium heat. Cook mahi mahi in the hot skillet until it flakes easily with a fork, 10 to 15 minutes.

Stir in more evaporated milk if needed, to create a sauce.

Preheat the oven's broiler and set the oven rack about 6 inches from the heat source.
