Ingredients for - Mexican Chicken I

1. Skinless, boneless chicken breast halves - 6
2. Salsa - 1 (20 ounce) jar
3. Red bell pepper, chopped - 1 large
4. Ground cumin - 2 tablespoons
5. Lemon juice - 2 tablespoons
6. Chili powder - 2 tablespoons
7. Crushed garlic - 3 cloves
8. Black beans, rinsed and drained - 2 (15 ounce) cans

How to cook deliciously - Mexican Chicken I

1. Stage

Preheat oven to 400 degrees F (205 degrees C).

2. Stage

Arrange the chicken pieces in a 3 quart casserole dish or a 9x13 inch baking dish. Combine the salsa, red bell pepper, cumin, lemon juice, chili powder and garlic. Pour the mixture over the chicken. Pour the black beans on top and cover. Bake in the preheated oven for 1 to 1 1/2 hours. Serve with rice if desired.
