Ingredients for - Mexican Cold Pea Soup

1. Frozen peas, defrosted - 2 (10 ounce) packages
2. Fresh lime juice - ½ cup
3. Plain yogurt - 2 cups
4. Olive oil - ½ cup
5. Garlic, smashed - 4 cloves
6. Chili powder - 1 tablespoon
7. Ice water - 2 cups
8. Kosher salt - 2 tablespoons
9. Red bell pepper, chopped, or more to taste - ¼ cup
10. Chopped tomatoes, or to taste - 2 tablespoons
11. Chopped jalapeno pepper, or to taste - 1 tablespoon

How to cook deliciously - Mexican Cold Pea Soup

1. Stage

Puree peas in a food processor or blender, constantly scraping down the sides. If peas are too dry, add a little of the lime juice.

2. Stage

Add remaining lime juice, yogurt, olive oil, garlic, and chili powder. Blend until liquefied. Pour into a large bowl; add ice water and salt and stir to incorporate. Refrigerate until flavors combine, at least 4 to 6 hours.

Garnish each serving with red pepper, tomato, and jalapeno.
