1. Olive oil - 1 tablespoon
2. Onion, chopped - 1
3. Garlic, finely chopped - 2 cloves
4. Chicken broth - 1 (32 ounce) carton
5. Tomato juice - 4 cups
6. Diced tomatoes, undrained - 1 (28 ounce) can
7. Chopped fresh spinach - 2 cups
8. Zucchini, chopped - 2
9. Carrots, chopped - 2
10. Celery, chopped - 2 stalks
11. Cannellini beans, drained and rinsed - 1 (15.5 ounce) can
12. Italian seasoning - 1 tablespoon
13. Salt (Optional) - 1 teaspoon
14. Ground black pepper (Optional) - ¼ teaspoon
15. Rotini pasta - 2 cups

How to cook deliciously - Minestrone Vegetable Soup

1. Stage

Heat olive oil in a large soup pot over medium heat; cook and stir onion and garlic in the hot oil until onion is tender, 2 to 5 minutes. Stir chicken broth, tomato juice, diced tomatoes and their juice, spinach, zucchini, carrots, celery, cannellini beans, Italian seasoning, salt, and black pepper. Bring soup to a boil, reduce heat to low, and cover pot. Simmer soup for 45 minutes.

2. Stage

Bring soup back to a full boil and stir in rotini pasta. Reduce heat to low and simmer until pasta is tender, 10 to 15 more minutes.
