Ingredients for - Curried Cream of Any Veggie Soup

1. Vegetable oil - 1 tablespoon
2. Onion, chopped - 1
3. Garlic, minced - 1 clove
4. Curry powder - 1 tablespoon
5. Chicken broth - 4 cups
6. Chopped mixed vegetables - 4 cups
7. All-purpose flour - 2 tablespoons
8. Nonfat milk - 2 cups
9. Salt and pepper to taste - 2 cups

How to cook deliciously - Curried Cream of Any Veggie Soup

1. Stage

Heat oil in a large saucepan over medium heat. Saute onion and garlic until tender. Stir in curry, and cook for 2 minutes, stirring constantly. Add broth and vegetables, and bring to a boil. Simmer 20 minutes, or until tender.

Dissolve flour in milk, then stir into the soup. Simmer until thickened. Season with salt and pepper.
