Ingredients for - Pasta with Spinach Pesto Sauce

1. Fresh spinach, washed and chopped - 16 ounces
2. Low-fat, firm silken tofu - 6 ounces
3. Fresh lemon juice - 2 tablespoons
4. Minced garlic - 1 tablespoon
5. Low-sodium chicken broth - ⅛ cup
6. Grated Parmesan cheese - ½ cup
7. Ground black pepper - ½ teaspoon
8. Italian seasoning - 1 teaspoon
9. Fresh mushrooms, thinly sliced - 10 ounces
10. Fresh sliced shiitake mushrooms - 6 ounces
11. Diced red onion - ½ cup
12. Bacon bits - ¼ cup
13. Penne pasta - 1 pound

How to cook deliciously - Pasta with Spinach Pesto Sauce

1. Stage

Cook pasta according to package directions.

2. Stage

While pasta is cooking, in food processor or blender, combine spinach, tofu, lemon juice, garlic, broth, cheese, pepper, and Italian seasoning, process until smooth. Set aside.

3. Stage

Spray a large non-stick saute pan with cooking spray. Over medium heat, cook onions and mushrooms until tender. Reduce heat to low, add pesto mixture and heat until hot.

Toss pasta with sauce and bacon bits. Serve with additional Parmesan cheese, if desired. NOTE: If sauce seems too thick, thin to desired consistency with pasta cooking water or broth.
