1. Fresh spinach, washed and chopped 16 ounces
2. Low-fat, firm silken tofu 6 ounces
3. Fresh lemon juice 2 tablespoons
4. Minced garlic 1 tablespoon
5. Low-sodium chicken broth ⅛ cup
6. Grated Parmesan cheese ½ cup
7. Ground black pepper ½ teaspoon
8. Italian seasoning 1 teaspoon
9. Fresh mushrooms, thinly sliced 10 ounces
10. Fresh sliced shiitake mushrooms 6 ounces
11. Diced red onion ½ cup
12. Bacon bits ¼ cup
13. Penne pasta 1 pound

How to cook deliciously - Pasta with Spinach Pesto Sauce

1 . Stage

Cook pasta according to package directions.

2 . Stage

While pasta is cooking, in food processor or blender, combine spinach, tofu, lemon juice, garlic, broth, cheese, pepper, and Italian seasoning, process until smooth. Set aside.

3 . Stage

Spray a large non-stick saute pan with cooking spray. Over medium heat, cook onions and mushrooms until tender. Reduce heat to low, add pesto mixture and heat until hot.

4 . Stage

Toss pasta with sauce and bacon bits. Serve with additional Parmesan cheese, if desired. NOTE: If sauce seems too thick, thin to desired consistency with pasta cooking water or broth.
