1. 1 tbsp. extra-virgin olive oil -
2. 4 boneless skinless chicken breasts -
3. Kosher salt -
4. Freshly ground black pepper -
5. 2 cloves garlic, minced -
6. 1 shallot, chopped -
7. 4 large peaches, sliced -
8. 1/4 c. balsamic vinegar -
9. 1/3 c. torn fresh basil -

How to cook deliciously - Peach Balsamic Chicken

1. Stage

In a large skillet over medium heat, heat oil. Season chicken with salt and pepper and cook until golden and no longer pink, 8 minutes per side. Transfer to a plate.

2. Stage

Add garlic and shallot to skillet and cook 2 minutes. Add peaches and cook until softened, 5 minutes more. Pour in balsamic vinegar and simmer until slightly reduced, 2 minutes, then stir in basil.

3. Stage

Serve chicken with balsamic peaches.
