Ingredients for - Quick Cassoulet

1. Vegetable oil 1 tablespoon
2. Carrots, diced 2
3. Celery, diced 2 stalks
4. Yellow onion, diced 1 small
5. Garlic, chopped 2 cloves
6. Smoked sausage, sliced ½ pound
7. Kidney beans, rinsed and drained 1 (15 ounce) can
8. Cannellini beans, rinsed and drained 1 (15 ounce) can
9. Diced tomatoes, drained 1 (14.5 ounce) can
10. Bay leaves 2
11. Dried thyme 1 teaspoon
12. Salt ½ teaspoon
13. Ground black pepper ¼ teaspoon
14. Chopped fresh parsley (Optional) 1 tablespoon

How to cook deliciously - Quick Cassoulet

1 . Stage

Heat oil in a large skillet over medium-high heat. Add the carrots, celery, onion, and garlic; cook and stir for a few minutes, until onion is transparent. Add sausage to the skillet, and cook for a few more minutes to brown.

2 . Stage

Pour in kidney beans, cannellini beans, and tomatoes; season with bay leaves, thyme, salt, and pepper. Cover, and reduce the heat to low. Simmer for 10 minutes, occasionally stirring until vegetables are tender.

3 . Stage

Remove bay leaves and discard. Sprinkle parsley over the top, and serve.
