Ingredients for - Quick Vegan Veggie Sandwich

1. Extra-virgin olive oil - 1 tablespoon
2. Garlic clove, finely chopped - 1 small
3. Tomato, finely chopped - ½ small
4. Green bell pepper, finely chopped - ¼
5. Red onion, finely chopped - ¼
6. Salt and ground black pepper to taste - ¼
7. Multigrain bread - 2 slices
8. Hummus spread - 1 tablespoon
9. Vegan mayonnaise (such as Follow Your Heart® Vegenaise®) - 1 tablespoon
10. Salt and ground black pepper to taste - 1 tablespoon
11. Sun-dried tomatoes packed in oil, drained and chopped - 4
12. Lettuce, or more to taste - 2 leaves

How to cook deliciously - Quick Vegan Veggie Sandwich

1. Stage

Heat olive oil and garlic in a frying pan over medium heat for 1 minute. Add tomato, bell pepper, and onion. Cook until soft, about 4 minutes. Season with salt and pepper and remove from heat.

2. Stage

While vegetables are cooking, toast bread slices. Spread hummus onto 1 slice. Spread vegan mayonnaise on the other and lightly season with salt and pepper.

3. Stage

Layer sun-dried tomatoes, lettuce, and cooked vegetables onto 1 slice and top with the remaining slice. Cut sandwich in half.
