1. Zucchini, halved lengthwise and sliced 6 medium
2. Eggplants, cut into 2-inch pieces 2 medium
3. Yellow onions, chopped 4
4. Tomatoes, chopped 4 medium
5. Red bell pepper, chopped 3
6. Garlic, minced 4 cloves
7. Vegetable broth ½ cup
8. Olive oil ¼ cup
9. Salt 2 teaspoons
10. Ground black pepper 2 teaspoons
11. Dried thyme ½ teaspoon
12. Dried oregano ½ teaspoon

1 . Stage

Combine zucchini, eggplant, onions, tomatoes, bell peppers, garlic, vegetable broth, olive oil, salt, pepper, thyme, and oregano together in a slow cooker. Cover.
