3. Yellow onions, chopped - 4
4. Tomatoes, chopped - 4 medium

6. Garlic, minced - 4 cloves
7. Vegetable broth - ½ cup
8. Olive oil - ¼ cup
9. Salt - 2 teaspoons
10. Ground black pepper - 2 teaspoons
11. Dried thyme - ½ teaspoon
12. Dried oregano - ½ teaspoon

1. Stage

Combine zucchini, eggplant, onions, tomatoes, bell peppers, garlic, vegetable broth, olive oil, salt, pepper, thyme, and oregano together in a slow cooker. Cover.
