1. Carrots, peeled and sliced 1 pound
2. Cauliflower, trimmed and cut into bite-size florets 1 head
3. Olive oil 3 tablespoons
4. Chopped fresh thyme 2 tablespoons
5. Minced garlic 1 tablespoon
6. Salt 1 teaspoon
7. Ground black pepper ½ teaspoon
8. Grated Parmesan cheese, or more to taste 1 cup
