Ingredients for - Roasted Potato Medley

1. Russet potato, cubed - 1
2. Red potato, cubed - 1
3. Sweet potato, peeled and cubed - 1
4. Olive oil - 2 tablespoons
5. Balsamic Vinegar - 2 tablespoons
6. Minced fresh thyme - 2 teaspoons
7. Garlic, minced - 3 cloves
8. Low fat, low sodium chicken broth - ¼ cup

How to cook deliciously - Roasted Potato Medley

1. Stage

Preheat oven to 375 degrees F (190 degrees C).

2. Stage

In a mixing bowl, combine the russet potato, red potato, sweet potato, olive oil, vinegar, thyme, garlic and chicken broth. Toss well to coat.

3. Stage

Place into casserole dish and roast uncovered for 40 minutes, or until potatoes are tender.
