1. Sweet potatoes, cut into 1/4-inch cubes - 2 large
2. Onion, cut into 1/4-inch pieces - 1 large
3. Oil - 1 tablespoon
4. Garbanzo beans, drained - 1 (15 ounce) can
5. Tomato, cut into 1/4-inch pieces - 1 large
6. Chopped fresh cilantro - ½ cup
7. Minced fresh ginger root - 2 tablespoons
8. Lime, juiced - 1
9. Garlic, minced - 1 clove

1. Stage

Preheat the oven to 400 degrees F (200 degrees C).

Combine sweet potatoes and onion in a large bowl. Add oil and toss to coat. Spread onto a large baking sheet.

Bake in the preheated oven until crisp-tender, about 30 minutes. Remove from the oven and allow to cool slightly, about 10 minutes.
