Ingredients for - Sausage and Pepper Stew

1. 3/4 lb. hot Italian sausage
2. 1 medium yellow onion
3. 1 medium green bell pepper
4. 1 medium red bell pepper
5. 1 1/2 tsp. Coarse salt
6. 1/4 tsp. Freshly ground black pepper
7. 1 can whole tomatoes
8. 1/4 c. loosely packed fresh flat-leaf parsley

How to cook deliciously - Sausage and Pepper Stew

1 . Stage

Remove casings from sausage; crumble into 1-inch pieces. Heat a large saute pan over medium heat. Add sausage; cook, stirring often, until browned and cooked through, about 8 minutes. Remove sausage from saute pan with a slotted spoon; set aside.

2 . Stage

Pour off all but 1 tablespoon of fat from the pan. Return to medium heat, and add onion. Saute onion until it is just beginning to brown and soften, about 5 minutes. Add peppers, and continue to cook for 10 minutes more.

3 . Stage

Season with salt and pepper. Add tomatoes; bring to a boil, and then lower heat and simmer until vegetables are tender and sauce has reduced and thickened slightly, about 12 minutes more.

4 . Stage

Return sausage to pan, and cook just enough to heat through. Stir in parsley, and adjust seasoning with salt and pepper.
