While the fish is boiling, prepare the rest of the ingredients. Chop the onion finely, rub the garlic with a fine grater (you can pass it through a garlic masher, but I like to grate it, so you get less cake and juice).

Mix the onion and garlic and fry until golden in butter. Fry on medium heat, so that the oil does not burn and smoke. At the end of the process, transfer the roast to the pan with the fish.

Defrost the shrimp (I have boiled-frozen). You can take them out of the freezer beforehand, if there is no time, I do easier - I put them in a sieve and hold under hot running water, in a minute all the ice is gone. After defrosting, clean the shrimp (if necessary). Squid carcasses defrost in the same way as the shrimp, peel, if necessary, cut in half rings. If you cook with octopus, rinse them thoroughly under running water.

While we are preparing all the ingredients, our fish has already boiled. We add octopus to the broth, cook for 3-4 minutes. Then add shrimp and calamari, cook for another 1 minute.

Pour the cream into the pot, bring it to a boil and immediately turn it off. Taste for salt, add more salt if necessary, add a little ground pepper to taste.

Ideally, the soup should stand for half an hour to make the taste even richer, but we usually eat it right away :) Before serving, you can sprinkle with finely chopped dill. Bon appetit!
