1. Red onion, coarsely chopped - 1
2. Red bell pepper, chopped - 1
3. Sliced fresh mushrooms - 1 cup
4. Zucchini, chopped - 1
5. Olive oil, divided - 3 tablespoons
6. Salt and freshly ground black pepper to taste - 3 tablespoons
7. Paprika - ¼ teaspoon
8. Fresh shrimp, peeled and deveined - 1 pound
9. Lemon zest - 1 teaspoon
10. Garlic powder - ½ teaspoon

1. Stage

Preheat the oven to 425 degrees F (220 degrees C).

Combine red onion, bell pepper, mushrooms, zucchini, 2 tablespoons olive oil, salt, pepper, and paprika on a sheet pan and toss well to combine.

Roast in the preheated oven until vegetables are softened, about 15 minutes.
