Ingredients for - Easy Veggie Pasta Primavera

1. Penne pasta - 8 ounces
2. Country Crock® Spread, divided - 3 tablespoons
3. Shallots, sliced - 2 medium
4. Garlic, chopped - 2 cloves
5. Cherry tomatoes, halved - 1 cup
6. Zucchini, sliced - 1 cup
7. Yellow squash, sliced - 1 cup
8. Frozen peas - 1 cup
9. Chicken or vegetable broth - ½ cup
10. Chopped fresh mint or basil - 1 tablespoon
11. Lemon zest - ½ teaspoon
12. Grated Parmesan cheese - ½ teaspoon

How to cook deliciously - Easy Veggie Pasta Primavera

1. Stage

Cook pasta according to package directions.

2. Stage

Meanwhile, melt 2 tablespoons Country Crock® Spread in large nonstick skillet over medium heat. Add shallots and cook 3 minutes or until tender. Add garlic and cook 1 minute.

3. Stage

Add vegetables and cook 3 minutes, stirring occasionally. Stir in broth and simmer 5 minutes or until vegetables are tender. Add remaining tablespoon Country Crock® Spread.

4. Stage

Toss vegetable mixture with cooked pasta, mint or basil, and lemon zest. Sprinkle with Parmesan cheese, if desired.
