Ingredients for - Easy Veggie Pasta Primavera

1. Penne pasta 8 ounces
2. Country Crock® Spread, divided 3 tablespoons
3. Shallots, sliced 2 medium
4. Garlic, chopped 2 cloves
5. Cherry tomatoes, halved 1 cup
6. Zucchini, sliced 1 cup
7. Yellow squash, sliced 1 cup
8. Frozen peas 1 cup
9. Chicken or vegetable broth ½ cup
10. Chopped fresh mint or basil 1 tablespoon
11. Lemon zest ½ teaspoon
12. Grated Parmesan cheese ½ teaspoon

How to cook deliciously - Easy Veggie Pasta Primavera

1 . Stage

Cook pasta according to package directions.

2 . Stage

Meanwhile, melt 2 tablespoons Country Crock® Spread in large nonstick skillet over medium heat. Add shallots and cook 3 minutes or until tender. Add garlic and cook 1 minute.

3 . Stage

Add vegetables and cook 3 minutes, stirring occasionally. Stir in broth and simmer 5 minutes or until vegetables are tender. Add remaining tablespoon Country Crock® Spread.

4 . Stage

Toss vegetable mixture with cooked pasta, mint or basil, and lemon zest. Sprinkle with Parmesan cheese, if desired.
