1. Water - 1 ½ quarts
2. Thinly sliced tteok (Korean rice cakes), drained - 1 (24 ounce) package
3. Eomuk (Korean fish cakes), sliced - 1 (14 ounce) package
4. Simple syrup - 3 tablespoons
5. Gochujang (Korean hot pepper paste), or more to taste - 3 tablespoons
6. Red chile powder, or more to taste - 2 tablespoons
7. Minced garlic - 1 tablespoon
8. Salt - ½ teaspoon
9. Ground black pepper - ½ teaspoon
10. Diced white onion - 1 cup
11. Chopped green onions - 1 cup

1. Stage

Bring water to a boil in a saucepan. Add rice cakes and fish cakes; return to a boil. Add simple syrup, gochujang, chile powder, garlic, salt, and pepper; cook for 1 to 2 minutes. Add onion and green onion. Simmer until sauce is red, thick, and silky, about 5 minutes.
