Ingredients for - Spinach and Mushroom Frittata

1. Frozen chopped spinach, thawed and squeezed thoroughly to remove liquid - 1 (10 ounce) package
2. Eggs or equivalent egg substitute - 4
3. Part-skim ricotta cheese - 1 cup
4. Freshly grated Parmesan cheese - ¾ cup
5. Chopped portobello mushrooms - ¾ cup
6. Finely chopped scallions with some green tops - ½ cup
7. Dried Italian seasonings - ¼ teaspoon
8. Salt and pepper, to taste - 1 pinch

How to cook deliciously - Spinach and Mushroom Frittata

1. Stage

Preheat the oven to 375 degrees F (190 degrees C).

2. Stage

In a large bowl, whisk together all ingredients until well mixed. Spray a 9-inch pie plate with cooking spray and fill it with spinach mixture.

Bake for 30 minutes, or until browned and set. Let cool for 20 minutes, cut in wedges, and serve.
