1. Garlic-flavored oil - 1 tablespoon
2. Cubed potatoes - 4 ½ cups
3. Canadian bacon, cut into 1/2-inch dice - 1 cup
4. Chopped red bell pepper - ¾ cup
5. Chopped chives or green onions - ¼ cup
6. Garlic, minced - 2 cloves
7. Dried basil leaves - 1 teaspoon
8. Sargento® Shredded Reduced Fat Mild Cheddar Cheese, divided - 2 cups
9. Salt and pepper, to taste - 1 pinch

How to cook deliciously - Cheesy Breakfast Potatoes

1. Stage

Heat oil over medium heat in large skillet. Add potatoes; cook 10 minutes, or until potatoes are browned and tender, stirring frequently.

2. Stage

Stir in bacon, red pepper, chives, garlic and basil. Cook 3 minutes, until red pepper is crisp-tender, stirring frequently. Add 1 cup cheese; stir until melted. Season to taste with salt and pepper. Top with remaining cheese.
