Ingredients for - Strawberry Avocado Salad

1. 1/4 c. extra-virgin olive oil -
2. 2 tbsp. fresh lemon juice -
3. 1 tsp. poppy seeds, plus more for garnish -
4. 1 tsp. honey -
5. 1/2 tsp. Dijon mustard -
6. Kosher salt -
7. Freshly ground black pepper -
8. 5 c. packed Wellsley Farms baby spinach -
9. 2 c. strawberries, halved or quartered, if large -
10. 1 avocado, peeled, pitted and chopped -
11. 1/2 c. sliced almonds, lightly toasted, plus more for garnish -
12. 1/2 small red onion, thinly sliced -
13. 4 oz. goat cheese, crumbled -

How to cook deliciously - Strawberry Avocado Salad

1. Stage

In a small jar with a tight fitting lid, shake oil with lemon juice, poppy seeds, honey, and mustard. Season with salt and pepper. 

2. Stage

In a large bowl, combine spinach, strawberries, avocado, almonds, and onion. Drizzle dressing over salad and toss to combine. Top with goat cheese, more poppy seeds and more almonds. Serve immediately.
