1. Small red potatoes, halved 1 ¾ pounds
2. Carrots, cut into 3-inch pieces 1 ½ pounds
3. Olive oil 3 tablespoons
4. Honey 1 tablespoon
5. Lemon zest 1 teaspoon
6. Dried oregano ½ teaspoon
7. Salt ½ teaspoon
8. Freshly ground black pepper ¼ teaspoon

How to cook deliciously - Roasted Carrots and Potatoes

1 . Stage

Preheat the oven to 400 degrees F (200 degrees C).

2 . Stage

Toss potatoes and carrots in a large bowl with olive oil. Add honey, lemon zest, oregano, salt, and pepper; toss to coat. Spread onto a large rimmed baking sheet.
