1. 2 tbsp. fresh lemon juice -
2. 1/2 tsp. Dijon mustard -
3. 1/4 c. extra-virgin olive oil -
4. Kosher salt -
5. Freshly ground black pepper -
6. 2 rotisserie chicken breasts, shredded or cut into 1/2" pieces -
7. 1/4 small red onion, thinly sliced -
8. 5 c. packed baby spinach (about 5 oz.) -
9. 2 c. thinly sliced strawberries -
10. 3/4 c. coarsely chopped toasted pecans, divided -
11. 5 oz. feta, crumbled -

How to cook deliciously - Strawberry Spinach Salad

1. Stage

In a large bowl, whisk lemon juice and mustard. While whisking, slowly pour in oil until smooth and emulsified; season with salt and pepper.

2. Stage

Add chicken, onion, spinach, strawberries, and 1/2 cup pecans and toss to combine.

3. Stage

Pile salad onto plates. Top with remaining 1/4 cup pecans and a generous crumbling of feta.
