1. Butter - 1 tablespoon
2. Raw cashews - 1 ½ cups
3. White sugar - ¾ cup
4. Crushed dried mint - 1 tablespoon
5. Cayenne pepper - 1 teaspoon
6. Ground cumin - 1 teaspoon
7. Ground coriander - 1 teaspoon
8. Lemons, juiced - 7
9. White sugar, or more to taste - ½ cup
10. Unsweetened coconut milk - ½ (15 ounce) can
11. Fresh ginger, finely chopped, or more to taste - 1 (1 inch) piece
12. Watermelon, cut into bite-sized chunks - 6 cups
13. Cantaloupe, cut into bite-size pieces - 3 cups
14. Kiwi fruits, sliced - 4
15. Apple, diced - 1
16. Raisins - ½ cup
17. Shredded coconut - ½ cup

How to cook deliciously - Thai-Inspired Fruit Salad

1. Stage

Cover a baking sheet with aluminum foil.

2. Stage

Cook and stir butter, cashews, 3/4 cup sugar, dried mint, cayenne pepper, cumin, and coriander in a skillet over medium-low heat until sugar has dissolved and cashews are browned, 7 to 10 minutes.

Spread cashews over the prepared baking sheet to cool.

Place lemon juice and 1/2 cup sugar in a blender. Blend until sugar is dissolved. Add coconut milk and ginger; blend until smooth.

Combine watermelon, cantaloupe, kiwi, apple, raisins, and shredded coconut in a large bowl
