Ingredients for - Thimble Cookies

1. Butter ½ cup
2. White sugar ¼ cup
3. Egg yolk, beaten 1
4. Lemon juice 2 teaspoons
5. All-purpose flour 1 cup
6. Egg white 1
7. Finely chopped walnuts 1 cup
8. Raspberry jam, or as needed 1 cup

How to cook deliciously - Thimble Cookies

1 . Stage

Preheat the oven to 350 degrees F (175 degrees C).

2 . Stage

Cream butter and sugar; add yolk and lemon juice and beat well. Stir in flour until well blended.

3 . Stage

Form into 1-inch balls, dip into beaten egg white then into chopped nuts. Place on a greased cookie sheet, make a deep indentation in the center of each cookie.

4 . Stage

Bake for 5 minutes, then quickly indent centers again, continue baking for 10 minutes.

5 . Stage

Fill center of each hot cookie with raspberry jam.
