1. 1 large cucumber, chopped -
2. 1 pt. cherry tomatoes, preferably multi-colored, halved -
3. 1 can chickpeas, drained and rinsed -
4. 1/2 white onion, chopped -
5. 1/4 c. extra-virgin olive oil -
6. 2 tbsp. red wine vinegar -
7. Kosher salt -
8. Freshly ground black pepper -
9. 1/2 c. Feta, crumbled -
10. 2 tbsp. chopped fresh cilantro -

How to cook deliciously - Tomato Cucumber Feta Salad

1. Stage

In a large bowl, combine cucumber, tomato, chickpeas and onion.

2. Stage

Make dressing: In a small bowl, whisk together oil and vinegar and season with salt and pepper. Add to large bowl and toss to combine.

3. Stage

Top with feta and cilantro and serve.
