1. Black beans, rinsed and drained 1 (15 ounce) can
2. Black-eyed peas, rinsed and drained 1 (15 ounce) can
3. Pinto beans, rinsed and drained 1 (15 ounce) can
4. Yellow shoepeg corn, drained 1 (11 ounce) can
5. Diced celery 1 cup
6. Small bunch cilantro leaves, chopped 1
7. Red bell pepper, diced ½
8. Yellow bell pepper, diced ½
9. Chopped green onion ½ cup
10. Chopped pimento peppers 1 (2 ounce) jar
11. Minced jalapeno pepper 2 tablespoons
12. Minced garlic 1 tablespoon
13. Rice vinegar ½ cup
14. Extra virgin olive oil ½ cup
15. White sugar ⅓ cup
16. Salt 1 teaspoon
17. Ground black pepper ½ teaspoon

How to cook deliciously - Uptown Cowboy Caviar

1 . Stage

Combine black beans, black-eyed peas, pinto beans, shoepeg corn, celery, cilantro, red and yellow bell peppers, green onion, pimento peppers, jalapeño pepper, and garlic in a large bowl. Set aside.

2 . Stage

Bring rice vinegar, olive oil, sugar, salt, and black pepper to a boil in a saucepan over medium-high heat until sugar is dissolved, about 5 minutes. Allow to cool to room temperature, then pour over the bean mixture. Cover and refrigerate for 2 hours or overnight. Drain before serving.
