2. Vegetable oil, divided - 2 tablespoons
3. Garlic powder - 1 teaspoon
4. Red bell pepper, diced - 1
5. Yellow onion, diced - 1
6. Frozen corn - ½ cup
7. Jalapeño pepper, chopped - 1
8. Salt - 1 teaspoon
9. Ground black pepper - 1 teaspoon
10. Corn tortillas - 6 (6 inch)
11. Chopped green onions - ¼ cup
12. Chopped cilantro - ¼ cup
13. Lime, cut into wedges - 1

How to cook deliciously - Vegan Potato Tacos

Preheat oven to 400 degrees F (200 degrees C).

Place potatoes in a bowl; drizzle 1 tablespoon oil on top, add garlic powder, and mix to coat. Lay out potatoes on a baking sheet.
