Add a little olive oil to the mustard and mix well with a whisk until smooth after each addition. It is important not to drain all the oil at once, otherwise a uniform consistency will not turn out, try to pour an equal amount of oil the previous time. Use half the oil.

Then add salt and sugar, mix well. Then pour half the lemon juice, mix and add the rest. For a more beautiful color, add turmeric and mix well again. Then continue pouring in the remaining oil.
