1. Stage
In the bowl of the combine, with the nozzle "knives", sift the flour (a little more or less flour may be needed, so it is better to add 200 g, and the rest of the amount is set aside for now) and baking soda. Add salt and sugar (it is better to use fine sugar or replace it with powdered sugar). Cut the cold butter into cubes and add to the bowl as well. You can also do everything by hand, just grind all the ingredients with your hands, until the formation of floury crumbs.

Add sour cream to the flour crumbs.

The dough should come together in a clump. Take out the dough and knead 1-2 more on a table, dusted with flour. I needed to add another 50 grams of flour, and all in all it took me 250 grams of flour to knead.

Put the finished dough in a bag (it is best to divide the dough into 3-4 pieces) and put it in the freezer for 30-40 minutes.

Grate the frosted dough on a coarse grater. Half the dough on one baking tray. It is not necessary to sprinkle the tray with flour (it was an experiment). Spread the dough evenly all over the baking tray.

Bake in a preheated 180g oven for about 15-20 minutes until golden. During baking, take out the tray 2-3 times and flip the dough with a spatula, so it would bake evenly. Transfer the finished dough to a bowl and cool. Crush the cooled dough with a rolling pin or by hand so that large pieces remain.

Cream: In a saucepan, combine the milk, sugar and a pinch of salt. Sift in the cocoa and starch. Mix thoroughly with a whisk so that there are no lumps. The syrup should be placed on a low flame, stirring all the time, until it begins to thicken and boil. After boiling, cook for no more than 30 seconds.

Remove from the heat and immediately add the butter. Stir thoroughly and let stand for a while.
