1. 1 boneless pork loin roast (2 to 3 pounds) -
2. 1/2 teaspoon salt -
3. 1/4 teaspoon pepper -
4. 1 tablespoon canola oil -
5. 3 medium apples, peeled and sliced, divided -
6. 1/4 cup honey -
7. 1 small red onion, halved and sliced -
8. 1 tablespoon ground cinnamon -
9. Minced fresh parsley, optional -

How to cook deliciously - Apple Pork Loin

1. Stage

Sprinkle the roast with salt and pepper. In a large skillet, brown the roast in oil on all sides; cool slightly. With a paring knife, cut about sixteen 3-inch-deep slits on the sides of the roast; insert one apple slice into each slit.

Place half of the remaining apples in a 4-quart slow cooker. Place the roast over the apples. Drizzle with honey; top with the onion and remaining apples. Sprinkle with cinnamon.

Cover and cook on low for six to eight hours or until the meat is tender. Remove the pork and apple mixture; keep warm.

Transfer the cooking juices to a small saucepan. Bring to a boil; cook until the liquid is reduced by half. Serve with the pork and apple mixture. Sprinkle with parsley if desired.
