1. Vegetable oil, for frying - 1 tablespoon
2. Pita breads, torn into pieces - 2 small (4 inch)
3. English cucumber, finely diced - 1 large
4. Halved grape tomatoes - 3 cups
5. Chopped Italian parsley - ¾ cup
6. Chopped fresh mint - ¾ cup
7. Red onion, finely diced - ½
8. Extra-virgin olive oil, or to taste - 2 tablespoons
9. Fresh lemon juice, or to taste - 1 tablespoon
10. Ground sumac, or to taste - 1 teaspoon
11. Garlic, crushed, or more to taste - 1 clove
12. Kosher salt and freshly ground black pepper to taste - 1 clove
13. Sheep's milk feta cheese - 1 ounce

How to cook deliciously - Arabic Fattoush Salad

1. Stage

Heat oil in a large skillet over medium-high heat. Working in batches, fry pita pieces in hot oil until golden brown on both sides. Blot dry with paper towels and set aside.

2. Stage

Combine cucumber, tomatoes, parsley, mint, red onion, olive oil, lemon juice, sumac, garlic, kosher salt, and ground black pepper in a large serving bowl. Gently toss salad with fried pita pieces. Grate feta cheese on top using a small cheese grater to serve.
