1. 8 strips bacon, cut into 1/4" pieces -
2. 2 tbsp. butter -
3. 2 French baguettes, cut into 6" pieces, sliced lengthwise -
4. 2 c. ricotta -
5. 2 c. arugula, washed and dried -
6. Honey -
7. Flaky sea salt (such as Maldon) -
8. Freshly ground black pepper -
9. 1 lemon, cut into wedges -

How to cook deliciously - Bacon Tartines with Ricotta, Honey and Arugula

1. Stage

In a large skillet over medium-high heat, cook bacon until browned and crisp, then transfer to a paper towel-lined plate.

2. Stage

Transfer all but 1 tablespoon bacon fat into a small cup and reserve. Melt 1 tablespoon butter in skillet and toast baguettes, cut side down, until golden brown. Add additional butter as needed.

3. Stage

Remove toast from skillet and spread each piece with ricotta. Top with a small handful of arugula and pieces of bacon. Drizzle with honey, then sprinkle with sea salt and pepper. Serve with lemon wedges.
