1. Barley - 1 cup
2. Water - 2 ½ cups
3. Cooked bay shrimp - 1 pound
4. Frozen corn, thawed - 2 cups
5. Diced green bell pepper - ½ cup
6. Diced red bell pepper - ½ cup
7. Green onions, chopped - 4
8. Chopped fresh thyme - 1 tablespoon
9. Minced lemon zest - 1 teaspoon
10. Fresh lemon juice - ¼ cup
11. Olive oil - ¼ cup
12. Salt - ½ teaspoon
13. Freshly ground black pepper - ½ teaspoon

How to cook deliciously - Barley, Shrimp, and Corn Salad

1. Stage

Combine barley and water in a saucepan. Bring to a boil. Cover, reduce heat, and simmer for approximately 35 minutes.

2. Stage

Transfer barley to a large bowl, and toss with shrimp, corn, bell peppers, green onions, thyme, and lemon zest.

3. Stage

In a small bowl, whisk together lemon juice and oil. Season with salt and pepper. Pour dressing over barley salad, and toss to combine.
