Bird's nests with tomato sauce and noodles

1 . Stage

Let's make dough in two colors: green "spinach" and yellow (with turmeric). I'm not stopping at making the noodles, because it's already published on the site. Boil the noodles and strain them. Soak the bread in cold water, squeeze, knead with raw eggs, minced meat and finely chopped scallions. Salt and pepper to taste.

2 . Stage

Heat the sunflower oil in a high saucepan. Divide the stuffing into 8 portions and flatten each portion into a flapjack. Roll the eggs (boiled) in flour. Each egg is encased in a shell of minced meat. "Nests" - one by one - fry in deep fryer for 5-6 minutes. For a child, I replaced 1 chicken egg with 4 quail eggs: smaller and healthier.

3 . Stage

Place in a baking tray and bake in a preheated 200*C oven until done (about 30 minutes)

4 . Stage

Sauce: chop frozen tomatoes (I have cherry tomatoes) and, without defrosting, bring to a boil, salt, add spices and sugar (to taste).

5 . Stage

Put a leaf of lettuce on the plate, put two types of noodles and a "nest", pour a little sauce. Very tasty and colorful!
