2. Black beans, drained and rinsed - 3 (15 ounce) cans
3. Buttery round crackers (such as Ritz®), crushed - 1 sleeve
4. Shredded Cheddar cheese - 1 cup
5. Diced multi-colored bell peppers - 1 cup
6. Frozen corn kernels - ⅔ cup
7. Diced onion, or to taste - ½ cup
8. Jalapeno pepper, diced - 24 slices
9. Egg white - 1
10. Hot taco seasoning mix - 1 (1 ounce) packet
11. Spicy Ranch-style seasoning mix - 1 (1 ounce) package

How to cook deliciously - Black Bean Vegetarian Meat Loaf

1. Stage

Preheat the oven to 350 degrees F (175 degrees C). Generously coat the inside of an 8x13-inch baking dish with cooking spray.

2. Stage

Mash black beans in a large bowl. Mix crackers, Cheddar cheese, bell peppers, corn, onion, jalapeño pepper, egg white, taco seasoning, and Ranch seasoning into black beans until evenly mixed. Spoon mixture into the prepared baking dish; form into a loaf.

Bake in the preheated oven until cooked through, 45 to 60 minutes.
