1. 1 cup water -
2. 2 tablespoons butter -
3. 1/2 teaspoon salt -
4. 1/8 teaspoon cayenne pepper -
5. 1 cup all-purpose flour -
6. 4 large eggs, room temperature -
7. 1-1/4 cups shredded Gruyere or Swiss cheese -
8. 1 tablespoon Dijon mustard -
9. 1/4 cup grated Parmesan cheese -

How to cook deliciously - Cheese Puffs

1. Stage

In a large saucepan, bring the water, butter, salt and cayenne to a boil. Add the flour all at once, and stir until a smooth ball forms.

2. Stage

Remove the pan from the heat, and let it stand for five minutes. Add the eggs, one at a time, beating well after each addition. Continue beating until the mixture is smooth and shiny. Stir in the Gruyere and mustard.

3. Stage

Preheat the oven to 425°F. Drop the dough by 1-inch balls, 2 inches apart on greased baking sheets. Sprinkle them with the Parmesan cheese.

Bake for 15 to 20 minutes or until golden brown. Serve the cheese balls warm or cold.
