Ingredients for - Chicken Curry

1. 2 tbsp. extra-virgin olive oil
2. 1 medium yellow onion, chopped
3. 2 lb. boneless skinless chicken breasts, cut into 1" pieces
4. 3 cloves garlic, minced
5. 1 tbsp. minced ginger
6. 1 1/2 tsp. paprika
7. 1 1/2 tsp. ground turmeric
8. 1 1/2 tsp. ground coriander
9. 1 tsp. ground cumin
10. 1 (15-oz.) can crushed tomatoes
11. 1 1/2 c. low-sodium chicken broth
12. 1/2 c. heavy cream
13. Kosher salt
14. Freshly ground black pepper
15. Basmati rice or naan, for serving
16. 1 tbsp. freshly chopped cilantro, for garnish

How to cook deliciously - Chicken Curry

1 . Stage

In a large pot over medium-high heat, heat oil. Add onion and cook until soft, 5 minutes. Add chicken and sear until no pink remains, 5 minutes. Stir in garlic and ginger and cook until fragrant, 1 minute.

2 . Stage

Add spices and cook until very fragrant, 1 minute. Add tomatoes and broth and bring to a simmer. Stir in heavy cream, and season with salt and pepper. Simmer until chicken pieces are cooked through and tender, about 15 to 20 minutes. 

3 . Stage

Serve over rice or with naan, garnished with cilantro.
