1. Preheat the oven to 190C. Grease 2 baking trays with oil.

2. Beat the butter with the vanilla essence, sugar and egg to form a light, airy mass.

3. Add the ground hazelnuts, sifted flour and cocoa powder. Stir well, then wrap the dough in clingfilm and leave in the refrigerator for an hour to harden it.

4. Roll out the dough between two sheets of baking paper into a 3 mm high layer.

5. Using a 4 cm diameter mold, cut out circles of dough and place them on the prepared baking trays.

6. Bake for 8 minutes, allow to cool for 5 minutes and transfer to a wire rack until cool.

7. Melt the chocolate in a steam bath together with the butter, let cool and add the Nutella. Stir the cream thoroughly.

8. Fill a piping bag with chocolate. Squeeze the cream onto one cookie and cover the other cookie, pressing down. A full teaspoon of cream goes on each sandwich. Sprinkle the sandwiches with cocoa powder.
