1. Chopped fresh mint leaves 2 ½ cups
2. Minced onion ⅓ cup
3. White sugar ⅓ cup
4. Distilled white vinegar ¼ cup
5. Ground cayenne pepper ½ teaspoon
6. Salt ½ teaspoon

In a medium bowl, mix the mint, onion, sugar, vinegar, cayenne pepper and salt. Cover the mixture and refrigerate 2 hours, or until chilled.
