How to cook deliciously - Croissants with cottage cheese and raspberries
1. Stage
Prepare the dough. I have a special one, for croissants, but you can also take puff pastry without yeast. Each layer should be slightly rolled out and cut into triangles.
2. Stage
Mix the cottage cheese with the fine cane sugar. The fine sugar is good because it dissolves quickly when cooked and gives the filling a creamy flavor.

Prepare the raspberries. I have freshly frozen. There is no need to defrost them beforehand.

On the edge of each triangle put cottage cheese and raspberries.
5. Stage
Roll croissants, brush with egg yolk and bake for 25-30 minutes at 180 degrees until crispy. Take the croissants out of the oven and immediately, hot, brush with apricot confit and sprinkle with almond petals. Serve with tea!
