Ingredients for - Elegant Oyster Soup

1. Butter - 2 tablespoons
2. Carrot, finely chopped - ½ cup
3. Onion, finely chopped - ½ cup
4. Celery, finely chopped - ½ cup
5. Button mushrooms, chopped - ½ cup
6. Butter - ½ cup
7. All-purpose flour - ¼ cup
8. Chicken broth - 1 quart
9. Artichoke hearts, drained - 1 (14 ounce) can
10. Bay leaf - 1
11. Salt - ¾ teaspoon
12. Cayenne pepper - ½ teaspoon
13. Dried thyme - ¼ teaspoon
14. Dried oregano - ¼ teaspoon
15. Dried sage - ¼ teaspoon
16. Heavy cream - 1 cup
17. Shucked oysters and juice - 12

How to cook deliciously - Elegant Oyster Soup

1. Stage

In a large pot, saute chopped carrot, onion, celery and fresh mushrooms in 2 tablespoons of butter for 5 minutes or until the onions are transparent.

2. Stage

In another large pot, melt 1/2 cup butter and stir in the flour. Cook for 5 minutes.

3. Stage

Whisk in the chicken broth to the flour mixture. Add the sauteed vegetables, artichokes hearts, bay leaf, salt, cayenne pepper, thyme, oregano and sage. Simmer for 30 minutes over medium heat.

4. Stage

Whisk in cream and add oysters; bring to a simmer, but do not boil.
