1. 6 very ripe heirloom tomatoes
2. 1/4 tsp. sugar
3. Salt
4. 2 green onions
5. 2 clove garlic
6. 2 tsp. minced fresh oregano
7. Balsamic Vinegar
8. Sherry vinegar or white wine vinegar
9. 3 tbsp. extra-virgin olive oil
10. country-style bread

1 . Stage

Slice the tomatoes, capturing their juices. Layer the tomatoes on a platter, sprinkling them with the sugar, salt to taste, green onions, garlic (if using), oregano, and the captured juices as you arrange them.

2 . Stage

Drizzle lightly with balsamic vinegar and sherry vinegar and then drizzle generously with olive oil. Let stand at room temperature until ready to serve, up to 2 hours.
