1. Extra-lean ground beef - 2 pounds
2. Mexican stewed tomatoes, chopped - 1 (14.5 ounce) can
3. Saltine crackers, crushed - 1 (4 ounce) packet
4. Onion, chopped - ½ large
5. Green bell pepper, chopped - ½
6. Egg - 1
7. Taco seasoning mix - 1 package
8. Pepper Jack cheese - 6 slices
9. BBQ sauce, or to taste - ¼ cup

How to cook deliciously - Holy Moly Taco Meatloaf

1. Stage

Preheat the oven to 350 degrees F (175 degrees C).

2. Stage

Mix beef, stewed tomatoes, saltine crackers, onion, bell pepper, egg, and taco seasoning together in a bowl until thoroughly combined. Transfer 1/2 the mixture to a 9x13-inch pan. Place pepper Jack cheese slices down the middle. Top with remaining meat mixture to seal cheese in between. Top with BBQ sauce.

3. Stage

Bake in the preheated oven until cooked through and browned on top, about 1 hour.
