Ingredients for - Homemade Ramp Mayonnaise

1. Egg - 1 large
2. Egg yolks - 2 large
3. Dijon mustard - 1 teaspoon
4. Salt to taste - 1 teaspoon
5. Light olive oil - ¾ cup
6. Extra-virgin olive oil - 2 tablespoons
7. Freshly squeezed lemon juice, or more to taste - 2 tablespoons
8. Minced ramps, to taste - 2 tablespoons

How to cook deliciously - Homemade Ramp Mayonnaise

1. Stage

Combine egg and egg yolk in a food processor and start processing. Slowly pour in light olive oil and extra virgin olive oil until mixture becomes thick and creamy. Add lemon juice and salt.

2. Stage

Transfer mayonnaise to a small bowl and stir in ramps. Spoon into a jar with a lid and refrigerate until serving.
