1. Egg 1 large
2. Egg yolks 2 large
3. Dijon mustard 1 teaspoon
4. Salt to taste 1 teaspoon
5. Light olive oil ¾ cup
6. Extra-virgin olive oil 2 tablespoons
7. Freshly squeezed lemon juice, or more to taste 2 tablespoons
8. Minced ramps, to taste 2 tablespoons

How to cook deliciously - Homemade Ramp Mayonnaise

1 . Stage

Combine egg and egg yolk in a food processor and start processing. Slowly pour in light olive oil and extra virgin olive oil until mixture becomes thick and creamy. Add lemon juice and salt.

2 . Stage

Transfer mayonnaise to a small bowl and stir in ramps. Spoon into a jar with a lid and refrigerate until serving.
