1. 4 oz. thick-cut bacon, chopped into 1/2" pieces -
2. 2 large shallots, finely chopped -
3. 1/2 c. sun-dried tomatoes in oil, chopped -
4. Kosher salt -
5. 3 cloves garlic, chopped -
6. 1 tbsp. fresh thyme leaves, chopped -
7. 1 c. dry white wine -
8. 1 c. low-sodium chicken broth -
9. 4 lb. fresh mussels, scrubbed and debearded  -
10. 2 tbsp. unsalted butter -
11. 1 tsp. za'atar seasoning  -
12. 1 tbsp. chopped fresh parsley  -
13. Toasted crusty bread, for serving -

How to cook deliciously - How to Cook Mussels

1. Stage

In a heavy, 5-quart Dutch oven or pot over medium heat, cook bacon, stirring occasionally, until crisp, about 10 minutes. Using a slotted spoon, transfer bacon to a paper towel-lined plate.

2. Stage

In same pot over medium heat, cook shallots, tomatoes, and 1/2 teaspoon salt, stirring occasionally, until shallots start to soften, about 3 minutes. Add garlic and thyme and cook, stirring, until fragrant, about 1 minute more. Add wine, broth, and 1/4 teaspoon salt and bring to a simmer. Add mussels to simmering broth. Cover and cook until mussels have opened, 7 to 8 minutes; discard any mussels that are still closed.  

3. Stage

Transfer mussels to a 13"x9" pan, leaving broth in pot. Whisk butter and za’atar into broth and pour broth over mussels. Top with reserved bacon and parsley. Serve with bread alongside.
