1. Vegetable oil ¼ cup
2. Chopped bell peppers 2 cups
3. Red onion, chopped 1 large
4. Celery, chopped 4 stalks
5. Carrots, chopped 4 small
6. Italian sausage links, casings removed 2 ½ pounds
7. Italian-style stewed tomatoes, undrained 5 (14.5 ounce) cans
8. Water, or more to taste 6 cups
9. Black beans, rinsed and drained 2 cups
10. Kidney beans, rinsed and drained 2 cups
11. Tomato paste 1 ¼ cups
12. Uncooked brown rice 1 cup
13. Chopped green chile peppers ½ cup
14. Chili powder, or more to taste 1 tablespoon
15. Chipotle peppers in adobo sauce 1 tablespoon
16. Salt 1 teaspoon
17. Ground black pepper 1 teaspoon
18. Shredded Cheddar cheese 1 cup

How to cook deliciously - Italian Sausage Chili with Rice

1 . Stage

Heat oil in a large saucepan over medium heat; stir in bell peppers, onion, celery, and carrots. Cook and stir until crisp tender, about 5 minutes.

2 . Stage

At the same time, heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease.

Transfer cooked vegetables and sausage to a Dutch oven. Stir in stewed tomatoes, 6 cups water, black beans, kidney beans, tomato paste, brown rice, chile peppers, chili powder, chipotle peppers in adobo sauce, salt, and pepper. Bring to a boil.

Reduce heat and simmer, uncovered, until thickened, 1 hour or more. Add more water if too thick.
