Ingredients for - Jeyuk Bokkeum (Spicy Pork Bulgogi)

1. 2 pounds pork shoulder or pork butt, thinly sliced -
2. 1/2 small Asian pear, cut into chunks -
3. 1/2 yellow onion, cut into chunks -
4. 4 cloves garlic -
5. 1 teaspoon minced ginger -
6. 1 green onion, chopped -
7. 3 tablespoons soy sauce -
8. 1 tablespoons sugar  -
9. 1 tablespoons rice syrup or honey  -
10. 2 teaspoons toasted sesame oil -
11. 1/4 cup gochujang -
12. Pinch of ground black pepper -
13. 1/2 yellow onion, thinly sliced -
14. To serve -
15. Thinly sliced green onions -
16. Toasted sesame seeds -
17. Lettuce leaves, for wrapping -
18. Perilla leaves, for wrapping -
19. Cooked rice, for serving -

How to cook deliciously - Jeyuk Bokkeum (Spicy Pork Bulgogi)

1. Stage

Slice the pork: Thinly slice the pork into bite-sized pieces, about 1/4 to 1/2 inch thick. Place the pork in a zip-top bag or a glass container and set it aside while you made the marinade.

Make the marinade: In a food processor, combine the pear, onion, garlic, ginger, and green onion, and process to a purée. Add the soy sauce, sugar, honey, sesame oil, gochujang, and black pepper, and pulse until combined. Pour the sauce over the pork and mix to coat. Cover and marinate for 30 minutes or up to 2 hours, in the refrigerator.

3. Stage

Cook the pork: When you’re ready to cook the pork, heat a cast iron pan or Korean BBQ grill pan over medium-high heat. Add the pork along with the thinly sliced onion, working in batches so that the meat doesn’t overlap and create steam, and cook, turning often, until the meat is cooked through and slightly charred, about 10 to 12 minutes.
