1. Red potatoes, cut into bite-size pieces - 2 pounds
2. Sour cream - 1 (16 ounce) container
3. Ranch dressing mix - 1 (1 ounce) package
4. Cooked bacon, crumbled - 1 ¼ cups
5. Shredded Cheddar cheese - 1 ½ cups
6. Green onions, thinly sliced - 2 bunches

Place the potatoes into a large pot and cover with salted water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until tender, about 20 minutes. Drain, then run under cold water until cool.
