1 . Stage
To make homemade kefir I used a yogurt machine - a thermos. We heat the milk to a temperature of 22-24 degrees. Pour 1 sachet of sourdough starter into the milk and mix thoroughly until the sourdough has dissolved. Close container with lid tightly. Pour boiling water into a thermos yogurt machine and put the container with milk. Close with lid and put in warm place for 6-10 hours. We cool the ready kefir in the fridge for at least 2 hours. I got 1 liter of delicious homemade kefir.
2 . Stage
Sift flour into a bowl. Add salt, egg.

Pour in 100 ml of homemade kefir.

Knead the dough lightly. The dough will be slightly sticky to your hands, there is no need to flour the dough too much. Cover the dough and put it in the fridge for 30-40 minutes.
5 . Stage
For the stuffing, in a small amount of oil fry chopped onion until golden. Add carrots and fry for 1-2 minutes more.
6 . Stage
Add minced meat, stir. Cook for 3-5 minutes on high heat, salt, pepper to taste. Then lightly stew at low temperature until tender. Stuffing prepared in this way will not be dry, while stewing will release broth, which will replace the sauce.
7 . Stage
Take the dough out of the fridge and divide it into three parts. Each part is rolled into a thin long "sausage" 3-4 cm thick. Cut into thin strips. Dip in boiling water, cook for 2-3 minutes after surfacing.
8 . Stage
The strips will slightly increase in volume, so cook in a large saucepan.
9 . Stage
With a slotted skimmer take out the strips, put the filling on top. Serve with sour cream.
